Week of June 1st

It is officially Summertime. Vacations, no school, great weather, trying new recipes. We decided to try out some new recipes during the week, while Delv is gone and back to the regular stuff on the weekends. We'll see how it goes.

Monday: Beef Stroganoff - Made with light sour cream

Tuesday: Grilled Chicken and Ceaser Salad

Wednesday: Italian Tortellini Salad

Thursday: Grilled Kabobs and Asparagus

Friday: Fajitas

Saturday: Hamburger Patties, Mashed Potatoes, Corn on the Cob

Saturday: Roasted Chicken, Red Potatoes and Green Beans

Week of May 25th

We have had a wonderful weekend. Nice and quiet so far but we are off to have a little fun today.

This week we'll be planning to have:

Monday: Mexican Potluck - celebrating a birthday

Tuesday: Leftovers - We'll be getting back a little late from out of town

Wednesday: Brenna is off to Girls Camp, so I'm thinking DATE NIGHT

Thursday: Fried Chicken, Mashed Potatoes

Friday: Flat Enchiladas

Saturday: Steak! It is Delv's last night at home for a week so we'll eat some great steaks

Sunday: Spaghetti, Bread

The Week of May 18th

I know, I know, I'm late AGAIN! It's been a crazy weekend and this week won't be much better. So here we go.

Monday: Deer Steak at Troy and Amy's. Thanks for letting my family intrude!

Tuesday: Steak Sandwiches - Roast beef, peppers, onions and mushrooms, saute in cooking spray or butter. Put some miracle whip and cheese on a sub roll, add the meat and your done

Wednesday: BBQ chicken, roasted red potatoes, green beans

Thursday: Sloppy Joes, veggie sticks

Friday: Tacos

Saturday: Pizza

Sunday: Roast, potatoes and carrots, homemade rolls

Jan's Potato Salad

This is one I have been asked for but have been putting off because there are not really any measurements. I guessed on all these. Add the amount and then more if you want.

Blend 1 cup Mayo or Miracle Whip, 1 Tbsp Mustard, and 3/4-1 cup of dill pickle juice until smooth. Add salt and pepper to taste. Then pour over:

4lb cooked, peeled potatoes
6 cooked, peeled eggs - chopped
1/2 cup diced celery (about 2 stalks)
1/2 cup diced red onion (about 1/4-1/2 onion)
1/2 cup diced dill pickles (about 6 pickles)
1 can sliced olives

Toss together. Sprinkle with Paprika. Refrigerate for at least 4 hours.

Week of May 11th

Monday: Hamburger Patties with Mashed Potaoes and Gravy

Tuesday: Leftovers - I know, we try to clean out the fridge often so we are not wasting food. My family doesn't love it, but they are starting to get used to it.

Wednesday: Chili dogs - Working late so gotta have something quick

Thursday: Chicken Stir Fry

Friday: Steak and Potatoes

Saturday: Chicken Enchiladas

Sunday: Slow Cooked Pepper Steak

One of Those Days...

Have you ever had one of those days, where you run all day and accomplish nothing. Then you walk down to the neighbor's house to borrow 3 eggs because you need 4 and you have already been to the grocery store 3 times today. Then you take time to make a carrot cake from scratch, only to find that your baking powder must be old and your cakes look like this...

Very dense carrot pancakes, UGH! They baked all the way through, so I will be frosting them and serving very dense carrot pancakes, stacked and finished with cream cheese frosting.

This is what I scraped from the bottom of my oven after I cleared the smoke. Disgusting!

I have now realized the best thing about vaulted ceilings, the smoke detector is very high.

I thought those of you who thought everything I made was perfect should see, IT'S NOT! At least it gave my husband a laugh. There is always tomorrow, hopefully it will be better.
