I'm late getting a menu up, but I have a really good reason.  We finally got to meet our newest niece last night.  It took 2 weeks to talk her into coming out of her nice warm home into this cold world with bright lights.  She's healthy and gorgeous, everyone is doing well and enjoying her.

Monday:  Whatever you want

Tuesday: Breakfast for Dinner - in 20 min. Biscuits and Gravy, scrambled eggs, bacon , hash browns and cantaloupe.  HINT:  I cheated and used powdered gravy mix and Grands biscuits, and I also had bacon and sausage that was already cooked.

Wednesday:  Chicken and Broccoli Alfredo

Thursday:  Grilled Ham and Cheese with Tomato Soup

Friday:  Mongolian Beef

Saturday:   Kabobs with Seasoned Rice

Sunday:  Meatloaf and Potato Corn Chowder

RECIPES

Quick Crock Pot Chicken Stew

TASTES LIKE HOMEMADE, BUT IS SO EASY!

2-3 cups shredded chicken (leftovers from a roasted chicken, sometimes I use turkey)
32 oz chicken broth
6 carrots, peeled and sliced
2 stalks of celery, sliced
1 small onion, chopped
1 clove of garlic
1 cup frozen peas
1 can family sized Cream of Chicken soup
salt and pepper
Homemade egg noodles (or frozen if you don't have time)

Pour chicken broth in crock pot, add chicken, carrots, onions, celery, garlic, and salt and pepper if desired.  Cook on high for 3 hours or on low for 6 hours.  Add cream of chicken soup, peas, and noodles.  Cook for 1 hour on high or 2 hours on low.  That's it, Enjoy!

HOMEMADE EGG NOODLES

1-2 large eggs
1/4 tsp salt
1 cup flour (may need more)

Mix all ingredients together to form a sticky dough.  Flour counter top and roll out dough, cut with knife or pizza cutter.  Cut in long strips or squares.  Bring 2 quarts of water to a boil and drop noodles in.  Noodles may get tough if too much flour is added or boiled for too long.  This doesn't take long to do, but it may take a few times of trying to get the noodles the way you like them.


Crock Pot Mexican Chicken

(I USE THIS FOR QUESADILLAS, TACOS, ENCHILADAS, ETC)

3 chicken breasts or 12 tenderloins (no need to thaw them, just throw them in frozen)
1 can of Rotelle tomatoes with green chiles or 3 roma tomatoes cut up
1/4 - 1/2 cup green chile
1 package taco seasoning
2 T minced, dried onion

Put all ingredients in crock pot and cook on low 8 hours.  Towards end of cooking use fork to pull apart chicken.  Use in favorite recipe.

OOPS... I got busy

I didn't make time to put a menu up this week.  Of course this would be the week, I was asked on Saturday "do you really make all those meals on your blog?"  The answer is yes, mostly.  Sometimes when we will be out of town or I don't have to cook for a husband then I do quick, easy meals and LOTS of leftovers.  My recipes are usually pretty easy and take less than 40 min to make.  I will post some more recipes soon.  For now, we've eaten lots of leftovers this week.  We've also had:

and
Steak

We were lucky to have family in town so we ate/will eat well this weekend.  Next week look for a MENU and 2 recipes for main dishes.  Enjoy your weekend.

Week of August 22nd

Oh my goodness, Fall will be here soon and then the long and dreaded Winter.  I could handle at least 3 more months of Summer.  The only thing I won't miss about Summer is all the food that has to be packed away for winter.  Gardens are exploding and my canner is working overtime.  If anyone is interested in canning recipes, leave a comment with what you may be looking for.  Last week I've done sweet relish, bread and butter pickles, green beans, tomatoes, freezer corn, and freezer squash.  I've got plenty more to do chicken and pinto beans are on the list again.  Now for  a menu...

Mongolian Beef

Many of you have used the recipe that I have used for awhile.  My husband doesn't like "sweet" with his beef so I found one that is more savory.  I tried this new recipe and LOVED it!  Here's the link:

I made it through last week! (I told you I would)  YAY!  There were some bumps in the road and some unexpected things that popped up, but I live another week to make dinner.  I got a good surprise though.  We got a grill!  After MANY years of marriage and hand me downs, we are collecting our own stuff finally:)  So LOTS of grilling in our future.  I'm so excited!

Week of April 4th

I have realized in the last month that food prices are rising and my time for preparing food is diminishing.  I am working more just to pay for the groceries we usually buy.  I have decided to try some tricks to save some more.
Saturday is usually laundry day, but now we are making it pantry and laundry day.  I will go through the pantry every Saturday to reorganize it and see what needs to be used.  We will be having at least 2 food storage meals a week.  Next is I will be getting out the crock pot cook books.  I get home after 5 pm at least 2 days a week and that makes it so easy to not want to cook.  Wish me luck!

Monday:  Breaded Chicken Sandwiches (I'm attempting to make some ciabatta rolls, I'll let you know)

Tuesday:  Bean Burritos  (Beans from food storage)

Wednesday:  Chicken Lo Mein, Gyozas (In the freezer)

Thursday:  BBQ Chicken, Roasted Potatoes, Frozen Corn

Friday:  Sloppy Joes

Saturday:  Steak, Potatoes and Salad

Sunday:  Chicken Pot Pie

After I made the menu, I made my grocery list and I have a short list for milk, veggies and fruit.  (Budget $30).
I have been trying to keep my monthly bill around $150 so I can spend $50 on eating out or Schwan's frozen meals and put some money away for my trip to Costco every 2-3 months (roughly $200-$300).  That's about $300 a month on groceries.  Oh MY!  I know we could cut back, but everyone takes their lunch and fresh fruits and veggies are a HUGE must at our house!

We have a goal this year of REALLY sticking to our budget better.  (Potentially costly vehicle repairs will do that to you)  So, I'm going to try to use food storage more and shop the grocery sales using more coupons.  What this means is probably less variety and more vegetarian meals.  When the meat-eating man of the house is working we will probably have a lot of soup:)  So my question is where do you find the best coupons and what is your goal this year?

Tuesday:  BBQ Beef Sandwiches (made from leftover roast from Sunday), Homemade buns, baked beans
