Week of June 29th

Looking forward to a fun-filled holiday weekend! I love 4th of July and we also have a huge Merrill family reunion. Should mean a lot of food, fun and family!

Thursday: Pizza, if I can talk Jan into making it:)

Friday: Chipotle style Taco Salad

Saturday: All-American Hamburgers and Hot Dogs

Oriental Chicken Salad


We had to try this one before I posted the recipe. This is such a simple dish, but very tasty and filling. It can also be made in less than 20 minutes. You can use frozen breaded chicken tenders/patties or leftover homemade chicken tenders.

Romaine Lettuce
Fresh Spinach
Green Onions
Chow Mein Noodles
Mandarin Oranges (drained)
Sliced Almonds
Breaded Chicken Breasts
Asian Toasted Seaseme Dressing (Kraft brand)

Preheat oven and cook chicken until warm all the way through. Cut up lettuce and onions. Toss together lettuce, onion and spinach. Separate on plates, top with chow mein noodles and mandarin orange segments. Cover with dressing and add sliced almonds. Finish off with chicken cut into bite sized peices. Enjoy!

Thursday: Oriental Chicken Salad

Saturday: BBQ Chicken, Roasted Red Potatoes, Broccoli

Sunday: Potato Corn Chowder

Week of June 15th

We are very lucky this week to be able to be away from home and be able to take care of Delv while my parents are away. Nothing new and exciting, but some of his favorites.

Monday: Chicken Enchiladas

Tuesday: Fried Chicken

Wednesday: Curry and Rice

Thursday: Stew and Rolls

Friday: Tacos

Saturday: Steak

Sunday: Leftovers - It will just be Brenna and I again, but I will probably send more meals with my husband until my parents get back.

Homemade Oreos


These yummy cookies were introduced to me by my friend Evvie, and even though I know it is not her recipe, I give her credit.

2 boxes Devil's Food Cake
1 1/2 cups shortening
4 eggs

Cut together cake mix and shortening. Add eggs and mix, dough will be stiff. Roll into balls, about a tsp size. Bake at 350 degrees for 9-11 minutes. Let cool thoroughly and frost with cream cheese frosting.

VARIATION: I have also used the whipped or fluffy white frosting. This works with other cake mixes and frostings too, like vanilla with chocolate frosting.
