Cinnamon Streusel Cake


This yummy cake was a favorite when I was growing up. This recipe is from my mom.

Batter:
Boxed Yellow Cake Mix
Small Package Instant Vanilla Pudding
2 Tbsp Oil
1 1/3 Cup Water
2 eggs (beaten)

Mix with electric mixer for 2 minutes on Medium. Grease bundt pan. Pour 3/4 of batter into the pan.

*I add 3 Tbsp flour to the dry cake mix for our altitude. I would do that for any altitude over 3500 ft.

Streusel:
1/2 cup flour
1/2 cup brown sugar
2 tsp cinnamon
2 Tbsp melted butter

Mix with a fork til moistened. Pour over batter in pan. Top with rest of the batter. Place in 375 degree oven for 45-50 minutes. Allow cake to cool in pan for about 20 minutes. When completely cool top with powdered sugar icing.

Week of April 1st

Our dinner menu for this week is:

Monday: Foil Dinners - We make these using Delvern's deer meat most frequently, and cook them in our wood burning stove. YUM!

Tuesday: Fajitas - The uncooked tortillas you buy at Walmart are almost as good as homemade.

Wednesday: Fried Chicken, Mashed Potatoes and Peas - I use crushed cracker crumbs with Greek Seasoning for my chicken.

Thursday: Chicken Pot Pie - Cook chicken and vegtables in chicken broth, then thicken with cream of chicken soup and put in cassorole dish, top with refridgerator biscuits or cresent rolls. Bake until browned.

Friday: Pizza Night - I like to make my own dough. I got the recipe from Jan:

2 cups warm water
2 Tbsp olive oil
2 tsp salt
4 cups flour
1 Tbsp yeast

Mix and let rise about 20 min. Makes enough for 2 large pizza crusts. Top, bake and enjoy.

Saturday: BLTs - Pretty self explanatory

Sunday: Meatloaf, Potatoes, Green Beans - I don't have a wonderful meatloaf recipe, so if anyone is willing to share one, I'd love it.

The Dreaded Question...

I hate the question that pops up every night between 4:30 and 6:30... What's for dinner? It doesn't matter if Delvern or Brenna asks, it makes me a little crazy. Even more so when I don't have an answer. The other problem is looking in my full pantry and refridgerator and not have a clue where to start. I don't have a very picky bunch of eaters but have a wonderful cook to live up to, Jan.
Sometimes I really wish there was a place I could look, other than a cookbook, at five o'clock that would tell me what we are having for dinner. Many of you have recieved one of my calls for ideas. Now it's my turn to return the favor. I decided to start this blog so maybe I could help someone else out.
Here's the idea. I will be happy to share my weekly menu but I'm hoping that you all will do the same now and again. Of course you may need to share recipes too. This could be fun!

Let me know what you all think and we'll try it out for awhile. This is dedicated to all the women in my life that keep me going day to day, I love you all!
