Week of January 3rd

New Year and New Menus.  I am ready for some new ideas.  Bring them on PLEASE!

Monday:  Oriental Chicken Salad

Tuesday:  Leftovers

Wednesday:  Sub Sandwiches

Thursday:  Out to Eat

Friday:  Fajitas

Saturday:  Cowboy Macaroni

Sunday:  Roast, Potatoes, Carrots

  1. We just made Chicken Parmesan last night. It was really yummy, and not too hard. Just pound out the chicken breast, coat with flour, then egg, then panko/parmesan/s&p mixture. Brown sides in a pan, then put on a cookie sheet with a little red sauce over the top and a slice of meunster cheese and bake until the chicken is done and the cheese is melty. Served over pasta. Yummy.

  3. The chicken parm sounds YUMMY! I think I'll try it, thanks!
    Cowboy Macaroni is made with tomato sauce with chili powder, s&p, etc. I make it similar to the sauce for flat enchiladas with ground beef too. Coat the cooked macaroni with it and top with cheese. Nothing special but the kids like that they think cowboys eat it:)
