I have been slacking on my preparedness. I had a menu for last week and didn't post it. So I will post 2 options for each day, one from last week and one from this week. I will also be using meals that are less than 30 minutes to prepare or can be done it the crockpot, since school, soccer and all the other activities have started up again.
Monday: Squash Cassorole - Chicken (cube and saute in 1 Tbsp. butter with onions), add green chili and yellow squash, let steam shortly. Layer 2 cups cooked rice, cream of mushroom soup, chicken mixture, and top with cheese. Heat through in oven.

Wednesday: Hamburger Patties with Gravy and Mashed Potatoes
Ground Beef Enchiladas
Thursday: Chicken Enchiladas
Roast Beef Subs
