I am bummed I didn't get any recipes out of my plea from last week. That's okay I understand summer is such a busy time of the year. If anyone still wants to share I would love it!
Menu for this week:
Monday: Chicken Pasta Salad - Brenna has only been begging me to make some for a few weeks
Tuesday: Flat enchiladas
Wednesday: Oriental Chicken Salad or Chicken Fried Rice & Eggrolls - I just can't decide :)
Thursday: HOmemade Pizza - Every one gets to top their own!
Friday: Chicken Fried Steak and Mashed Potatoes
Saturday: Chicken Wings and Potato Salad
Sunday: Fajitas
I'm excited to cook this week, since I won't be cooking for just Brenna and I. It's always more fun when you have company and on the weekends when the husband is home! Have a great week and eat well!

Week of July 20th
We will be out of town most of the week. So, I was thinking I would put a challenge out here...
There are a few things I would like recipes for. I will list them for this week and you guys send me some recipes to try! Sound okay? Let's give it a shot.
Monday: Macho Nachos - I use leftover taco meat, dehydrated refried beans (from food storage), and anything else I would put on taco salad.
Tuesday: Chicken Parmisian - I NEED A GOOD RECIPE
Wednesday: Lemon Chicken (Oriental) - RECIPE NEEDED
Thursday: Tamales - This is something I would REALLY like to learn to make
Friday: Easy Steak Sandwiches - I get roast beef from the deli, cut it up and saute it with onions, mushrooms, and peppers. Put on hoagie rolls with cheese.
Saturday: Cheeseburgers and fries
Sunday: Ham and scalloped potatoes (in the crock pot)

Oriental Chicken Salad
We had to try this one before I posted the recipe. This is such a simple dish, but very tasty and filling. It can also be made in less than 20 minutes. You can use frozen breaded chicken tenders/patties or leftover homemade chicken tenders.
Romaine Lettuce
Fresh Spinach
Green Onions
Chow Mein Noodles
Mandarin Oranges (drained)
Sliced Almonds
Breaded Chicken Breasts
Asian Toasted Seaseme Dressing (Kraft brand)
Preheat oven and cook chicken until warm all the way through. Cut up lettuce and onions. Toss together lettuce, onion and spinach. Separate on plates, top with chow mein noodles and mandarin orange segments. Cover with dressing and add sliced almonds. Finish off with chicken cut into bite sized peices. Enjoy!
